The History of Recipes
Recipes as an idea can be observed back into the far past, at least as far back into recorded history as early Egypt, and possibly even further. Having said that, these, old records were just simple hieroglyphic recipes for meal preparation.
As we move into The time of the roman empire around 25BC a man called Apicius created a few documents describing recipes prepared by his fellow Romans. In his publication, Apicius tells us how the roman meals were split into starters, entrees and afters, something we still use today. Aspicius recounts how the ancient Romans made use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks like bay, fennel and parsley. In the 15th century, knights returning from the crusades brought us many foods and herbs from the East, such as parsley, basil and rosemary. These new culinary innovations led to a surge in manuscripts on cooking, most of which still exist in private cookery archives. When we get to the 1900s, cooking publications are in great demand, mostly as a result of increased literacy, more free time and disposable income. |
