Ingredients
4 boneless, skinless chicken
1 breast halves (about 1lb)
1 salt and pepper
2 tbsp butter or margarine
1/4 cup finely chopped baked ham
1/3 cup chicken broth
1/3 cup blue-cheese dressing
1/4 cup chopped walnuts, lightly
1 toasted
1 chopped parsley, for garnish
1 , optional
Directions
Pound breast halves to 1/4-inch thickness. Season lightly with salt
and pepper.
Melt butter in large, non-stick skillet over medium-high heat until
bubbly. Saute cutlets about 3 minutes on each side until golden brown
and fully cooked. Remove to platter and keep warm.
Add chopped ham to skillet and cook 1 minute or until browned. Add
chicken broth and boil over high heat 1 to 2 minutes until reduced by
half. Reduce heat to low and stir in dressing; heat through. To serve
spoon sauce over chicken. Sprinkle with walnuts and parsley, if
desired.
Tip: To toast chopped nuts, place in small skillet. Cook over medium
heat, stirring constantly, just until nuts begin to smell toasty.
Remove from heat and cool.

The History of Recipes
Historians have proved the existance of recipes way back into the distant past, in truth as far back into recorded history as ancient Egypt, and potentially, even further back. In practice though, in the main part, these early recipes were just basic hieroglyphic recipes for preparing food.
In an interesting twist, the oldest recipe in existence, according to academics are a few clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Later on, in The time of the romans 25BC a man called Apicius assembled a few documents detailing recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into starters, main meal and desserts, something that is very familiar to us today. Additionally, he recounts how the chefs of Roman times made use of a wide range of spices, including a few you will know for example basil, mint and parsley. Later on, in the 15th century, the Crusaders brought back many foods and spices from Arab countries, including coriander, parsley, and rosemary. The introduction of these new herbs and spices was responsible for an eruption in books on cooking, some of which are now in private libraries. When we get to the 20th century, recipe books are in great demand, as a result of more people being able to read, more leisure time and having more disposable income. The TV revolution brought us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through thousands of recipes just like those on this recipe site. |
