Ingredients
4 chicken breast fillets
2 tbsp olive oil
3 tbsp lime juice (fresh)
1 tsp coriander, ground
1 tsp cumin, ground
1/2 tsp turmeric
1 tbsp fresh mint, chopped
Directions
Cut the chicken fillets into 1.5 cm strips.
Make the marinade by combining the remaining ingredients except the
olive oil in a small bowl. Add the chicken and marinade for at least
7 hours but preferably overnight turning occasionally.
Drain the chicken and reserve the marinade.
Heat the olive oil in a medium pan; add chicken and cook over a high
heat for 5-10 minutes or until lightly browned and tender; stir in
the reserved marinade.
Serve the chicken strips with hummus rolled in pita bread.

The History of Recipes
Food historians have proved the existence of recipes far back into ancient history, in fact as far back into history as the ancient Egyptians, and possibly even further than that. In practice though, these, ancient cookbooks were just simple hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the most ancient recipe found, according to food historians are a few ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Progressing into The time of the romans 25BC a roman called Apicius created a collection of documents showing how to cook the recipes enjoyed by wealthy Romans. In his works, he tells us how the roman meals were split into hors d`oeuvres, entrees and dessert, something we still use today. This early Roman chef describes how the Roman chefs were skilled in the use of many aromatic flavors, including a few that will be familiar to modern cooks like basil, mint and dill. In the 15th century, people returning from the crusades brought us a variety of spices and herbs from the East, such as parsley, basil and rosemary. The introduction of these new culinary ideas caused a surge in recipe manuscripts, most of which still exist in private libraries. Over the next few centuries, the rich and powerful families of the West strove to serve the most exotic banquets, and as a result cooks and their collection of recipes could command a high salary. However, it wasn`t until the 1800s that haute cuisine and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, trying out, and publishing recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cookery books are greatly in demand mostly due to increased literacy, people having more free time and having more money to spend. The introduction of television gave us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
