The History of Recipes
Written cooking instructions as a concept can be observed way back into ancient history, in fact as far as the Egypt of the Pharoahs, and possibly even further. Having said that, sadly, these early recipes were just basic hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the roman empire around 25BC a man called Apicius created a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into starters, main course and afters, a very modern way of dining. Aspicius describes how the Roman cooks used many different spices, including some familiar names like basil, fennel and asafoetida. Over the next few hundred years, the rich families of Europe strove to lay on the most extravagent banquests, and as a result cooks and their recipes were highly sought after. Nevertheless, it was during the nineteenth century that cooking and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collating, testing, and writing down recipes to help cooks of their time. When we get to the 1900s, cooking publications are starting to become popular as a result of increased literacy, more free time and disposable income. |
