Ingredients
2 tbsp unsalted butter
2 tbsp olive oil
4 skinless boneless chicken
1 breast halves -- * see note
1 tbsp flour
2 medium shallots -- minced (ca. 1/4
1 cup)
2/3 cup whipping cream
1/2 cup dry white wine
1/3 cup oil-packed sun-dried
1 tomatoes -- chopped &
1 drained
3 tbsp fresh basil -- chopped -or-
2 tsp dried basil
8 oz egg noodles -- cooked
Directions
* cut crosswise into 1/2 inch strips.
Melt butter and olive oil in large skillet over medium-high heat.
Season chicken with salt and pepper. Add chicken to skillet and saute
until light brown and just cooked through, about 3 minutes. Add
minced shallots to skillet and saute 1 minute. Sprinkle flour in
skillet and cook 1 minute. Add whipping cream, white wine, sun-dried
tomatoes and basil. Bring to boil; cook until sauce thickens,
stirring occasionally, about 4 minutes. Season to taste with salt and
pepper and serve over noodles.

The History of Recipes
Written recipes as an idea can be traced way back into distant history, certainly as far into history as early Egypt, and maybe even further. Interesting though that is, mostly, these early records were just very simple hieroglyphic or cunieform instructions for meal preparation.
In fact, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Later on, in The time of the romans around 25BC a roman called Apicius wrote some documents which described recipes prepared by wealthy roman citizens. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the cooks of Roman times made use of a good variety of herbs and spices, including a few that will be familiar to modern chefs for example thyme, rue and dill. Later on in the 1400s, people returning from the crusades brought back many new foods, spices and herbs from Arab countries, such as basil and coriander. These new herbs and spices prompted a torrent in manuscripts on cookery, the majority of which are kept safe in private cookery archives. The arrival of television gave us celebrity chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on our site. |
