The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into the distant past, certainly as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Having said that, generally, these ancient recipes were just primitive pictorial instructions for preparing food.
Interestingly, the oldest recipe found, according to Professor Solomon Katz, is a series of stone tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius assembled a few documents detailing recipes prepared by the Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvres, main meal and dessert, a very modern way of dining. This early Roman chef tells us how the ancient chefs used many different spices and herbs, including some that we all recognise such as basil, mint and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from the East, such as rosemary and coriander. These new foods and spices caused an explosion in recipe manuscripts, most of which are now in private cookery archives. During the next few hundred years, the powerful families of the West competed to lay on the most extravagent banquests, and as a result cooks and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, recipe books are highly popular as a result of increased literacy, more free time and being a little richer. Like it or not, the introduction of TV brought us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on this site. |
