The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into distant history, at least as far back into history as pharonic Egypt, and maybe even further. However, these, early records were just very basic hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to academics are a few tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. As we move into Roman times around 25BC a roman called Apicius assembled a number of documents describing recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals were separated into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the cooks of his times made use of a wide range of aromatic flavours, including some familiar names for example thyme, fennel and dill. Later, in the 15th century, knights returning from the crusades brought back many foods and herbs from Arab cuisine, including spices such as parsley and basil. The introduction of these new foods and spices led to a surge in books on cookery, the majority of which are kept safe in private libraries. The revolution that is television brings us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
