The History of Recipes
It is possible to read the history of `recipes` back into antiquity, certainly as far as ancient Egypt, and possibly even further. Having said that, generally, these ancient recipes were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the roman empire 25BC a man called Apicius compiled a collection of documents detailing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals were split into appetizers, main meal and afters, something that is very familiar to us today. This early Roman chef informs us how the cooks of Roman times used a good variety of herbs and spices, including many that are still in use today for example bay, rue and parsley. For the decades that followed, the powerful families of Europe competed to lay on the most exotic meals, and as a result chefs and their recipe collections were much in demand. Nevertheless, it was during the 19th century that cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collecting, verifying, and recording the recipes of their peers. By the time we get to the 1900s, recipe publications were highly popular mostly as a result of increased literacy, increased leisure time and having more disposable income. |
