Ingredients
1 1/2 cup dried chick peas, soaked*
1 tbsp olive oil
1 medium onion, chopped
2 each garlic cloves, crushed
14 oz canned tomatoes, chopped**
1 small can tomato paste
1 tsp basil
1 tsp oregano
1 dash cinnamon
2 tbsp parsley
1 salt & pepper to taste
Directions
Rinse chickpeas, place in fresh water & cook for 50 minutes or till
tender. Heat oil in large pot & saute onions & garlic for a few
minutes. Add the tomatoes & tomato paste. Bring to a boil, lower
heat & add the rest of the ingredients. Simmer for about 10 minutes
or until the sauce has thickened. Serve with mashed potatoes & green
vegetables or pasta or rice. * Or substitute one large can of
chickpeas, rinse well before using. ** Or use one pound of fresh
tomatoes, diced

The History of Recipes
Food historians have tracked the existance of recipes way back into the far past, in fact as far as early Egypt, and quite possibly further than that. In practice though, in the main part, these early cook books were just very basic hieroglyphic instructions for food preparation.
As we move on, we find two interesting cookery books from the 14th Century : one book called `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, these are nothing to do with the indian food that is popular today, but instead descriptions of the types of food prepared for the rich. Later, in the fifteenth century, people returning from the crusades brought back many new foods, spices and herbs from the holy land, such as parsley, basil and rosemary. The introduction of these new culinary ideas caused a surge in publications on food, many of which are now in private collections. The revolution that is television gave us celebrity chefs and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes like the ones you can find on this site. |
