Ingredients
6 green new mexican chiles roasted, p, eeled, stems an
1 seeds removed, cut in strips
1 tsp ground cayenne
2 tbsp ghee or vegetable oil
1 large onion, finely chopped
1 tbsp finely chopped fresh ginger
2 tsp ground coriander
1 tsp dry mustard
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp ground turmeric
1/4 tsp ground cloves
1 cup unsweetened coconut milk
3 tbsp heavy cream
Directions
Saute the onions and ginger in the oil until the onions are browned.
Add cayenne, coriander, mustard, cumin, cinnamon, turmeric, and
cloves. Heat for another minute.
Add the chiles to the pan along with the coconut milk. Simmer for 10
minutes, stirring constantly, until the sauce thickens. Stir in the
cream and simmer for an additional 5 minutes.

The History of Recipes
Recipes as an idea can be found back into ancient history, certainly as far into history as pharonic Egypt, and possibly even further than that. Having said that, in the main part, these old cookbooks were just very simple hieroglyphic or cunieform recipes for meal preparation.
Later on, in The time of the romans 25BC a man called Apicius created a number of scripts describing recipes cooked by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, a very modern way of dining. Additionally, he tells us how the ancient chefs used a good variety of herbs, including a few that are still present in modern kitchens like basil, rue and parsley. Over the succeeding few centuries, the rich families of the West competed with each other to lay on the most extravagent banquests, and consequentially cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and recording recipes that were common in the better off homes of the day. The TV revolution brings us cooking programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes such as those found on the site you are now reading. |
