The History of Recipes
It is quite possible to track the history of recipes back into history, in fact as far back as the Egyptians, and potentially, even further back. Interesting though that is, mostly, these ancient cook books were just primitive hieroglyphic instructions for preparing food.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, are some ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. During Roman times 25BC a man called Apicius compiled a few documents showing how to cook the recipes cooked by his fellow Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the Roman cooks were skilled in the use of many herbs and spices, including many that are still in use today such as thyme, fennel and dill. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cooking, including spices like coriander, basil and rosemary. These new foods and tastes prompted an increase in recipe manuscripts, the majority of which are now in private cookery archives. During the succeeding few centuries, the wealthy families of the West strove to offer the best banquets, and as a consequence, the best chefs and their recipes were greatly in demand. However, it wasn`t until the nineteenth century that haute cuisine and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, verifying, and recording popular recipes of the day. By the time we get to the twentieth century, cooking books were greatly in demand due to more people being able to read, people having increased spare time and being a little richer. Like it or not, the introduction of TV brought us TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like the ones you can find on our web site. |
