Ingredients
1 lb pork, ground
2 large onions, chopped
4 cl garlic, minced
1 medium pepper, sweet red; chopped
1 medium pepper, green; chopped
1 cup celery, chopped
2 can tomatoes, diced; with liquid 14 1/
1 can beans, kidney; drained and rins
1 can tomato paste, 6 oz.can
3/4 cup water
2 tsp sugar, brown
1 tsp oregano, dried
1 tsp chili powder
1/4 tsp red pepper flakes, dried
1/4 tsp cayenne pepper
1 dash hot pepper sauce
Directions
In a Dutch oven, brown pork and onions until pork is no longer pink;
drain. Stir in the garlic, peppers and celery. Cook for 5 minutes. Add
remaining ingredients; bring to a boil. reduce heat; cover and simmer
for 45 minutes. Makes about 2 1/2 quarts.

The History of Recipes
Transcribed cooking instructions as an idea can be found far back into history, in fact as far back into history as ancient Egypt, and possibly even further than that. Interesting though that is, in the main part, these old records were just basic hieroglyphic or cunieform instructions for meal preparation.
Continuing our culinary historical journey, we find some books which appeared in the 14th Century : a recipe book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the spicy food that appears on menues today, but instead recipes for the types of meals prepared by the chefs of the nobility of the period. Later on, in the 15th century, people returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, such as parsley, basil and rosemary. These new foods and tastes prompted an explosion in books on cooking, some of which are kept safe in private libraries. The TV revolution gave us TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes like the ones you can find on our site. |
