The History of Recipes
It is possible to trace the history of meal recipes back into the far past, in truth as far back into history as the Egyptians, and quite possibly further than that. In practice though, these, early records were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Later on, in The time of the roman empire 25BC a man called Apicius created a number of documents which described recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, main course and desserts, a style of dining still practiced today. He also tells us how the ancient cooks were skilled in the use of a wide range of aromatic flavors, including a few that are still present in modern kitchens like basil, fennel and parsley. Later, in the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from the holy land, including spices like coriander, parsley, and basil. The introduction of these new tastes caused an increase in recipe books, many of which are now in academic collections. During the following few hundred years, the rich families of Wesstern Europe tried to serve up the best banquets, and consequentially the best chefs and their recipes were highly sought after. However, it wasn`t until the nineteenth century that cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to assembling, trying out, and recording recipes to help cooks of their time. By the time we get to the 1900s, cooking publications are increasing in popularity due to better eduction, people having increased free time and being a little richer. The arrival of television brings us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on sites such as the one you are reading now. |
