The History of Recipes
Academics have tracked the existence of recipes back into ancient history, in truth as far as ancient Egypt, and quite possibly further than that. In practice though, sadly, these old records were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
During the time of the Romans a roman called Apicius wrote some documents showing how to cook the recipes cooked by the Romans. He describes how the meals of wealthy Romans were separated into starters, main meal and afters, a style of dining still practiced today. Aspicius tells us how the early Romans made use of a good variety of spices, including a few you will know like basil, mint and dill. Later on, in the 15th century, people returning from the crusades brought back a variety of foods and spices from middle-east cuisine, including parsley and basil. These new herbs and spices was responsible for an explosion in cookery books, many of which are kept safe in academic collections. When we get to the 20th century, cook books are greatly in demand as a result of higher levels of literacy, more leisure time and being a little richer. |
