1 1/2 cup all-purpose flour
2 tsp double-acting baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp cold unsalted butter
1 (cut into bits)
1/4 lb sharp cheddar
1 grated coarse (abt 1 1/2 cup
4 (2-inch) pickled jalapeo chi
1 seeded/minced
1 (wear rubbergloves)
1 cup sour cream
1 for the chili con carne:
2 large onions/abt 3 cups, chopped
1/4 cup vegetable oil
1 tbsp minced garlic
2 carrots, sliced thin
3 lb boneless beef chuck
1 (ground coarse in batches
1/4 cup chili powder
1 tbsp ground cumin
2 tbsp paprika
1 tbsp crumbled dried organo
1 tbsp dried hot red pepper flakes
1 or to taste
16 oz tomato sauce
1 1/4 cup beef broth
3 tbsp cider vinegar
19 oz can kidney beans
1 rinsed and drained
2 green bell peppers, chopped
Directions
MAKE THE SHORTCAKE BISCUITS : Into a bowl sift together the
flour, th add the butter, and blend the mixture until it resembles
coarse meal. Stir golden.
MAKE THE CHILI CON CARNE: In a kettle cook the onions in the oil

The History of Recipes
Experts have found proof that recipes existed way back into ancient history, in fact as far back as the early Egyptians, and possibly even further than that. Having said that, in the main part, these early records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe discovered, according to experts is a series of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. Closer to modern times, we have some interesting books dating from the 14th Century : a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the indian food that we all know today, but instead descriptions of the types of meals on the menues of the rich and powerful of the period. During the succeeding few centuries, the rich families of Europe strove to offer the most exotic banquets, and consequentially cooks and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, trying out, and publishing recipes that were common in the better off homes of the day. By the arrival of the 1900s, recipe books were greatly in demand due to better eduction, people having more free time and disposable income. Like it or not, the introduction of television brought us TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access thousands of recipes like those on sites such as the one you are reading now. |
