The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions back into distant history, in truth as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, generally, these old records were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe found, according to historians are some clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Progressing into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls which described recipes prepared by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into starters, main meal and afters, a style of dining still practiced today. Aspicius tells us how the cooks of his times were skilled in the use of a wide range of aromatic flavours, including some that we all recognise such as basil, rue and dill. Later, in the 15th century, knights returning from the crusades brought us many new foods and spices from the East, including spices such as rosemary and coriander. The introduction of these new culinary ideas was responsible for an eruption in manuscripts on cooking, many of which still exist in academic collections. Like it or not, the introduction of TV brought us celebrity chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes just like those on sites such as the one you are reading now. |
