The History of Recipes
We can trace the history of written recipes far back into antiquity, at least as far as pharonic Egypt, and maybe even further. However, these, ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe discovered so far, according to experts is a collection of stone tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. As we move into The time of the roman empire around 25BC a roman called Apicius wrote a number of documents which described recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and afters, a style of dining still practiced today. He also describes how the ancient chefs were skilled in the use of a wide range of herbs and spices, including a few you will know for example thyme, rue and asafoetida. In the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab cuisine, such as rosemary and coriander. The introduction of these new culinary ideas caused an outbreak in manuscripts on cookery, many of which still exist in private libraries. Over the next few hundred years, the powerful and rich houses tried to serve the best banquets, and because of this cooks and their recipe collections became highly prized. However, it wasn`t until the 1800s that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, verifying, and writing down recipes of the day. When we get to the 1900s, cook books were increasing in popularity due to higher levels of literacy, more free time and disposable income. |
