3 TB paprika
2 ts finely crushed oregano
1 ts ground cumin
1 ts ground turmeric
1 ts garlic powder
1/4 ts cayenne pepper
Mix all ingredients together thoroughly and use in place of chili
powder. Makes 4 tablespoons. Contains no salt as does bought chili
powder.

The History of Recipes
Experts have tracked the existence of recipes back into ancient history, in fact as far back as the early Egyptians, and potentially, even further back. Having said that, mostly, these ancient cookbooks were just very basic pictorial instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire 25BC a man called Apicius created a number of scripts showing how to cook the recipes cooked by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into starters, entrees and dessert, something that is very familiar to us today. Aspicius also recounts how the early Romans were skilled in the use of many spices and herbs, including some familiar names such as thyme, mint and parsley. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab cuisine, including spices like coriander, parsley, and rosemary. The introduction of these new foods and spices was responsible for a surge in recipe publications, some of which are kept safe in private cookery archives. Over the next few centuries, the rich families of the West strove to offer the most exotic banquets, and because of this the best chefs and their recipes were greatly in demand. Notwithstanding that, it was during the 1800s that haute cuisine and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collating, testing, and writing down recipes for their fellow cooks to enjoy. The introduction of television brings us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like the ones you can find on this recipe site. |
