3 TB paprika
2 ts finely crushed oregano
1 ts ground cumin
1 ts ground turmeric
1 ts garlic powder
1/4 ts cayenne pepper
Mix all ingredients together thoroughly and use in place of chili
powder. Makes 4 tablespoons. Contains no salt as does bought chili
powder.

The History of Recipes
Academics have tracked the existance of recipes way back into antiquity, in truth as far back as ancient Egypt, and maybe even further. Interesting though that is, generally, these old recipes were just very basic hieroglyphic instructions for meal preparation.
During Roman times around 25BC a roman called Apicius compiled a number of documents which described recipes cooked by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were split into appetizers, entrees and dessert, something that is very familiar to us today. Additionally, he recounts how the chefs of Roman times used many different spices, including a few that will be familiar to modern cooks like thyme, rue and dill. In the fifteenth century, people returning from the crusades brought us many new foods and herbs from Arab cooking, including spices such as parsley, basil and rosemary. The introduction of these new culinary ideas created an outbreak in recipe publications, some of which are kept safe in private cookery archives. Like it or not, the introduction of television brings us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, allowing everybody to search through thousands of recipes like those on this web site. |
