Directions

3 TB paprika
2 ts finely crushed oregano
1 ts ground cumin
1 ts ground turmeric
1 ts garlic powder
1/4 ts cayenne pepper

Mix all ingredients together thoroughly and use in place of chili
powder. Makes 4 tablespoons. Contains no salt as does bought chili
powder.

The introduction of these new foods and spices was responsible for a surge in recipe publications, some of which are kept safe in private cookery archives.

Over the next few centuries, the rich families of the West strove to offer the most exotic banquets, and because of this the best chefs and their recipes were greatly in demand. Notwithstanding that, it was during the 1800s that haute cuisine and recipe publications became popular.
