The History of Recipes
Written recipes as a concept can be found back into history, at least as far as the early Egyptians, and possibly even further. Having said that, sadly, these early cookbooks were just simple hieroglyphic recipes for meal preparation.
In an interesting twist, the oldest recipe discovered, according to food historians are some ancient tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Moving our culinary historical trip onwards, there are two interesting books dating from the 1300s : a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, they have no connection with the spicy food that is served today, but instead descriptions of the types of food on the menus of the rich and powerful of those days. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from the holy land, including spices such as parsley, basil and rosemary. These new foods and spices was responsible for an explosion in manuscripts on cookery, the majority of which are kept safe in academic collections. Over the next few hundred years, the wealthy families of the West competed with each other to serve up the most exotic banquets, and consequentially chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that cooking and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, trying out, and publishing recipes of the day. When we get to the 20th century, cooking books were in high demand, due to better eduction, more spare time and having more money to spend. The arrival of TV brought us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on our site. |
