The History of Recipes
Recipes as a concept can be tracked back into distant history, in fact as far back into recorded history as pharonic Egypt, and possibly even further than that. Interesting though that maybe, these, ancient records were just simple hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the romans around 25BC a man called Apicius created a collection of scripts which described recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals were divided into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Romans were skilled in the use of many spices and herbs, including a few that will be familiar to modern chefs like thyme, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many new foods and spices from the holy land, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices was responsible for a surge in recipe publications, the majority of which are now in private cookery archives. By the advent of the 1900s, cooking publications are starting to become popular as a result of better eduction, people having more leisure time and disposable income. |
