The History of Recipes
Written recipes as a concept can be observed way back into antiquity, in truth as far as the Egyptians, and possibly even further than that. In practice though, in the main part, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Much later, in Roman times a roman called Apicius compiled a few scripts which described recipes prepared by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient chefs used many spices, including some that we all recognise for example thyme, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from the holy lands, such as parsley, basil and rosemary. The introduction of these new tastes was responsible for an increase in manuscripts on food, some of which are kept safe in private collections. When we get to the twentieth century, cookery books were increasing in popularity due to better eduction, people having more spare time and having more money to spend. |
