Ingredients
4 each pork steaks
1 chopped onion
5 tbsp flour
4 cup water
1/4 tsp garlic
1/2 tsp red pepper
1/2 tsp oregano
2/3 tsp ground cumin
2 7-oz cans whole green chilies
Directions
Cut fat off steaks. Cut steaks into bite size pieces. Fry
until well done. Remove meat and cook onion until tender. Remove
onion. Make gravy with drippings and flour and water. Chop
green chilies. Return meat and onion to gravy with all other
ingredients, simmer. Add 2-3 hot fresno chilies if desired.

The History of Recipes
Transcribed cooking instructions as a concept can be tracked way back into the distant past, at least as far as pharonic Egypt, and potentially, even further back. In practice though, these, old cook books were just basic pictorial recipes for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to experts is a collection of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. Continuing our culinary historical journey, there are two interesting books which were published in the fourteenth century ; a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these two books are not about the indian curry that we all know today, but instead recipes for the types of food on the menus of the nobility of those days. Later on, in the 15th century, the Crusaders brought back many foods and spices from middle-east cuisine, including spices like parsley and basil. The introduction of these new culinary ideas created an increase in books on cookery, the majority of which are now in private collections. Over the succeeding few centuries, the powerful families of the West competed with each other to serve up the most extravagent banquests, and because of this the best chefs and their recipe collections became highly prized. However, it was during the nineteenth century that cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to assembling, testing, and writing down the recipes of their peers. The TV revolution brought us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes just like those on this recipe site. |
