The History of Recipes
Historians have found proof that recipes existed way back into ancient history, certainly as far into history as the Egyptians, and possibly even further than that. In practice though, mostly, these early recipes were just basic hieroglyphic instructions for food preparation.
Interestingly, the oldest recipe found, according to Professor Solomon Katz, is a series of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Closer to modern times, we have a couple of interesting recipe books from the 14th Century : one book called `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, these two books are not about the curry that appears on menues today, but rather recipes for the types of food served to the rich and wealthy people of those days. During the succeeding few hundred years, the rich families of Europe competed with each other to lay on the best banquets, and as a result cooks and their collection of recipes were greatly in demand. Notwithstanding that, it was during the nineteenth century that cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, trying out, and recording the recipes that were being prepared for the better households. By the arrival of the 1900s, cooking publications are in high demand, due to increased literacy, people having more spare time and being a little richer. |
