Chili With Kidney Beans Recipe


Ingredients

3 garlic cloves, minced
2 tbsp oil
4 lb lean ground beef
6 onions, chopped
4 green bell peppers, chopped
6 can whole tomatoes (1-lb size)
4 can red kidney beans (1-lb size) drain, ed
2 can tomato paste (6 oz size)
1/4 cup chili powder
1 tsp white vinegar
3 dash red pepper
3 whole cloves
1 bay leaf
1 salt, pepper
1 rice (optional)


Directions

Saute garlic in oil in large heavy kettle until golden. Crumble in
beef and cook 10 minutes, or until evenly browned. Pour some of oil
and drippings into skillet. Add onions and green peppers and cook
until tender. Add to cooked meat with tomatoes, kidney beans, tomato
paste, chili powder, vinegar, red pepper, cloves and bay leaf, and
season to taste with salt and pepper. Cook, covered, over low heat 1
hour. If too dry, add additional tomatoes. If too liquid, uncover and
simmer longer. Serve with rice, if desired.

During the succeeding few hundred years, the rich families of Europe competed with each other to lay on the best banquets, and as a result cooks and their collection of recipes were greatly in demand. Notwithstanding that, it was during the nineteenth century that cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collating, trying out, and recording the recipes that were being prepared for the better households.

By the arrival of the 1900s, cooking publications are in high demand, due to increased literacy, people having more spare time and being a little richer.
