The History of Recipes
Academics have traced the existance of recipes way back into antiquity, in truth as far back as pharonic Egypt, and maybe even further. Having said that, generally, these old cook books were just very simple pictorial instructions for meal preparation.
During the time of the Roman Empire a roman called Apicius compiled a collection of scripts detailing recipes cooked by wealthy Romans. In his works, Apicius tells us how the roman meals were separated into appetizers, main meal and dessert, something we still use today. Aspicius also describes how the Roman chefs were skilled in the use of a good variety of aromatic flavours, including a few you will know like basil, mint and asafoetida. Over the following few hundred years, the rich and powerful families of Europe competed to serve up the most exotic meals, and consequentially the best cooks and their recipes became highly prized. Even so, it was during the 19th century that formal cookery and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, trying out, and writing down recipes that were common in the better off homes of the day. By the arrival of the 20th century, cookery publications are in great demand, mostly due to better eduction, people having more leisure time and disposable income. |
