The History of Recipes
Food historians have traced the existence of recipes far back into ancient history, in truth as far into history as the ancient Egyptians, and quite possibly further than that. However, sadly, these ancient cook books were just very basic pictorial instructions for meal preparation.
Fascinatingly, the most ancient recipe found, according to experts are some clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Much later, in Roman times a man called Apicius compiled some scripts detailing recipes prepared by the Romans. In his scrolls, he tells us how the meals were split into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the ancient chefs were skilled in the use of a wide range of aromatic flavours, including a few you will know for example thyme, mint and asafoetida. Over the succeeding few hundred years, the rich families of Europe competed to lay on the best banquets, and as a consequence, the best chefs and their recipe collections could command a high salary. Even so, it was during the nineteenth century that formal cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and publishing the recipes of their peers. The TV revolution brought us TV cooks and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes just like those on our site. |
