The History of Recipes
We can read the history of `recipes` far back into ancient history, in fact as far as the Egyptians, and potentially, even further back. Having said that, these, old cookbooks were just very simple hieroglyphic recipes for meal preparation.
Later on, in Roman times around 25BC a roman called Apicius compiled some scripts showing how to cook the recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the Roman chefs used a good variety of herbs and spices, including a few you will know like bay, rue and parsley. Later on in the 1400s, people returning from the crusades brought us many new foods, spices and herbs from Arab countries, including spices like basil and rosemary. The introduction of these new herbs and spices created an explosion in publications on food, some of which are kept safe in private cookery archives. By the advent of the 20th century, cooking publications are increasing in popularity mostly due to higher levels of literacy, people having increased leisure time and having more money. |
