Ingredients
1 stephen ceideburg
6 large mandarines
2 tbsp orange flower water
1 icing sugar
Directions
This fruit salad couldn't be simpler or more delicious after a rich
main course. Orange-flower water can be bought in Greek and Lebanese
food stores.
Zest 2 large or 4 small mandarines, peel 4 large or 8 small without
segmenting them and remove as much pith from the fruit as possible.
Slice into rounds, removing the pips, and overlap the slices in a
serving dish, conserving any juice. sprinkle with the zest and about
2 tablespoons orange-flower water, dust with icing sugar, cover with
cling film and leave to macerate in the refrig- erator for a couple
of hours. Taste the juices and adjust if necessary with sugar or a
little lemon juice. Chill again and serve.

The History of Recipes
Written cooking instructions as an idea can be tracked way back into antiquity, certainly as far back into recorded history as the ancient Egyptians, and maybe further still. Having said that, generally, these early cookbooks were just primitive hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the romans 25BC a roman called Apicius compiled a few documents detailing recipes prepared by the Romans. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvre, main course and desserts, a very modern way of dining. He also informs us how the cooks of Roman times made use of a wide range of spices, including some familiar names like basil, fennel and asafoetida. Over the succeeding few centuries, the rich and powerful families of Europe competed to lay on the most exotic banquets, and because of this the best cooks and their recipes were at a premium. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and writing down recipes to allow everyone to enjoy them. When we get to the 20th century, cookery publications are highly popular mostly due to higher levels of literacy, people having more leisure time and having more disposable income. |
