The History of Recipes
Academics have found proof that recipes existed way back into distant history, certainly as far into history as the Egyptians, and quite possibly further than that. However, these, ancient cook books were just very basic hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the oldest recipe discovered, according to food historians are some tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Later on, in Roman times 25BC a roman called Apicius assembled a few documents describing recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the meals were separated into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the cooks of Roman times used many different spices, including a few you will know for example thyme, rue and dill. In the fifteenth century, knights returning from the crusades brought back many foods, spices and herbs from the holy land, including basil and rosemary. The introduction of these new foods and spices prompted an eruption in recipe publications, the majority of which are kept safe in private libraries. During the succeeding few hundred years, the upper-class families of Wesstern Europe competed with each other to lay on the best banquets, and consequentially the best cooks and their collection of recipes were at a premium. Nevertheless, it wasn`t until the 19th century that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, testing, and writing down the recipes of their peers. By the arrival of the 1900s, cookery publications were in high demand, due to better eduction, more leisure time and having more money to spend. Like it or not, the introduction of television brings us cooking programs and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to search through thousands of recipes like those on this web site. |
