Ingredients
1/2 cup oil
1 cup vinegar
1 tsp salt
2 cloves crushed garlic
2 tbsp finely chopped parsley
1 scallion, chopped
1 small tomato, peeled, seeded and chopped
1 small sweet pepper, finely chopped
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp chili powder
2 bay laurel leaves, broken in small, pieces
1/2 tsp oregano
Directions
Mix ingredients together in a bottle or jar. Let stand for at least
12 hours, or a full day in a dry place. Shake prior to use.

The History of Recipes
It is possible to follow the history of written recipes far back into distant history, in fact as far as the Egyptians, and possibly even further than that. Having said that, sadly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered, according to food historians is a collection of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Later on, we find a couple of books from the 14th Century - a book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Amusingly, they are unconnected to the curry that we all know today, but instead recipes for the types of meals prepared by the cooks of the rich people of that period. Later on in the 1400s, people returning from the crusades brought back many new foods, spices and herbs from the holy lands, such as coriander, basil and rosemary. These new spices and herbs was responsible for a torrent in manuscripts on food, the majority of which are kept safe in private collections. For the centuries that followed, the powerful and rich strove to lay on the best banquets, and consequentially cooks and their recipes could command a high salary. Even so, it was during the nineteenth century that formal cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and publishing the recipes of their peers. By the time we get to the 20th century, cookbooks are starting to become popular due to better eduction, people having more spare time and having more money to spend. The introduction of the TV gave us celebrity TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like the ones you can find on this recipe site. |
