The History of Recipes
Written recipes as an idea can be observed way back into antiquity, in truth as far as ancient Egypt, and potentially, even further back. In practice though, in the main part, these early records were just basic pictorial recipes for meal preparation.
Progressing into Roman times around 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes prepared by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into starters, main course and desserts, something that is very familiar to us today. Aspicius also describes how the Roman cooks were skilled in the use of many spices and herbs, including a few that will be familiar to modern cooks such as basil, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back many new foods and herbs from the Middle-East, including parsley and basil. The introduction of these new culinary ideas was responsible for an increase in books on cooking, some of which are now in academic collections. The introduction of the TV gave us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this site. |
