The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into the distant past, certainly as far as early Egypt, and possibly even further. Interesting though that is, in the main part, these ancient recipes were just basic pictorial instructions for meal preparation.
Progressing into The time of the romans around 25BC a man called Apicius assembled a few documents detailing recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals were divided into appetizers, main course and desserts, something that is very familiar to us today. This early Roman chef tells us how the early Romans used a wide range of herbs and spices, including a few that are still present in modern kitchens like basil, mint and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and herbs from middle-east cuisine, such as parsley, basil and rosemary. These new foods and tastes created a torrent in recipe books, some of which are now in private cookery archives. By the advent of the 1900s, recipe books are highly popular mostly as a result of higher levels of literacy, more free time and being a little richer. |
