The History of Recipes
It is quite feasible to follow the history of recipes back into the distant past, certainly as far as the Egyptians, and quite possibly further than that. However, these, ancient cook books were just very basic pictorial recipes for meal preparation.
Progressing into The time of the romans around 25BC a man called Apicius assembled a number of scripts detailing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals were separated into appetizers, main meal and desserts, something we still use today. Additionally, he recounts how the early Romans used a good variety of spices, including some familiar names like bay, rue and asafoetida. During the next few hundred years, the powerful families of Wesstern Europe competed to lay on the best banquets, and consequentially the best cooks and their recipe collections increased in prestige. Nevertheless, it was during the 19th century that fine cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, testing, and writing down recipes to allow everyone to enjoy them. By the time we get to the twentieth century, recipe publications were highly popular due to better eduction, more leisure time and a general increase in wealth. |
