The History of Recipes
We can trace the history of meal recipes far back into antiquity, in fact as far back into history as the early Egyptians, and maybe further still. However, in the main part, these ancient cook books were just basic hieroglyphic instructions for preparing food.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Later on, in Roman times around 25BC a roman called Apicius wrote some documents showing how to cook the recipes enjoyed by the Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. He also informs us how the cooks of his times made use of many herbs and spices, including a few that will be familiar to modern cooks like thyme, mint and dill. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from the holy land, including coriander, parsley, basil and rosemary. These new herbs and spices prompted an explosion in manuscripts on cooking, many of which are now in private cookery archives. For the next few years, the powerful and wealthy houses strove to serve up the best banquets, and consequentially the best cooks and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that cooking and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. By the advent of the twentieth century, cook books are greatly in demand due to better eduction, people having more leisure time and being a little richer. The introduction of the TV gave us TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on our web site. |
