The History of Recipes

Written cooking instructions as an idea can be tracked back into the distant past, in fact as far as the ancient Egyptians, and maybe even further. Interesting though that is, these, early cook books were just very simple pictorial instructions for preparing meals.

Much later, in Roman times a man called Apicius assembled a few documents which described recipes prepared by the Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the chefs of Roman times used a wide range of spices and herbs, including a few you will know such as thyme, mint and parsley.

Over the succeeding few hundred years, the powerful families of the West tried to lay on the best banquets, and as a result chefs and their recipe collections could command a high salary. However, it wasn`t until the 19th century that fine cookery and cookery books really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy.

When we get to the twentieth century, recipe books are increasing in popularity due to increased literacy, increased leisure time and having more money to spend.
