Rousseau. Combine all ingredients in food processor until very smooth
and creamy. Spread on crackers, bread or bagels. Also terrific in
sandwiches.

The History of Recipes
It is quite possible to track the history of written cooking instructions back into antiquity, certainly as far back into history as the Egypt of the Pharoahs, and maybe even further. However, mostly, these ancient recipes were just simple hieroglyphic recipes for preparing meals.
Interestingly, the oldest recipe discovered, according to Professor Solomon Katz, is a series of tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of scripts detailing recipes enjoyed by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into appetizers, main course and dessert, something we still use today. Aspicius describes how the ancient chefs were skilled in the use of many spices, including some that we all recognise such as basil, mint and parsley. During the next few hundred years, the wealthy families of the West competed to serve the most extravagent banquests, and consequentially chefs and their recipe collections were highly sought after. Even so, it was during the nineteenth century that haute cuisine and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, testing, and writing down the recipes that were being prepared for the better households. By the time we get to the twentieth century, cooking books were highly popular as a result of better eduction, leisure time and being a little richer. Like it or not, the introduction of TV brought us TV cooks and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this recipe site. |
