The History of Recipes
Food historians have traced the existence of recipes far back into ancient history, certainly as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that maybe, generally, these old recipes were just very simple pictorial instructions for food preparation.
Fascinatingly, the oldest recipe in existence, according to historians are a few tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. As we move into The time of the roman empire 25BC a roman called Apicius compiled some scripts detailing recipes prepared by the Romans. In his publication, he describes how the meals were separated into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the ancient chefs used many different herbs, including a few that are still present in modern kitchens like bay, mint and dill. Over the following few hundred years, the rich and powerful families of the West competed to lay on the most exotic banquets, and as a consequence, chefs and their collection of recipes were much in demand. Even so, it wasn`t until the 1800s that fine cookery and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, verifying, and recording recipes that were common in the better off homes of the day. By the arrival of the 20th century, cookery books were highly popular mostly due to more people being able to read, more spare time and having more money. The introduction of television gave us TV cooks and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes like those on the site you are now reading. |
