The History of Recipes
It is quite feasible to follow the history of recipes back into ancient history, in truth as far into history as the Egyptians, and possibly even further than that. Interesting though that maybe, in the main part, these ancient cookbooks were just primitive pictorial instructions for preparing meals.
Progressing into The time of the romans around 25BC a man called Apicius created some documents which described recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into starters, entrees and desserts, a very modern way of dining. This early Roman chef describes how the Roman cooks were skilled in the use of many different herbs and spices, including a few that will be familiar to modern cooks for example bay, rue and asafoetida. Later, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from Arab countries, such as parsley, basil and rosemary. The introduction of these new herbs and spices was responsible for an outbreak in books on cooking, most of which are kept safe in private libraries. By the advent of the 1900s, cooking publications were starting to become popular due to more people being able to read, people having more spare time and having more disposable income. |
