The History of Recipes
Written recipes as a concept can be traced far back into ancient history, in truth as far back as the Egyptians, and maybe further still. Interesting though that is, in the main part, these early recipes were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Much later, in Roman times a roman called Apicius created a collection of scripts which described recipes cooked by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius also tells us how the cooks of Roman times were skilled in the use of a good variety of spices, including some that we all recognise for example basil, rue and dill. Over the succeeding few hundred years, the upper classes tried to offer the best banquets, and consequentially the best cooks and their recipes became highly prized. However, it wasn`t until the 19th century that haute cuisine and recipe books rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, testing, and writing down recipes common in their social group. When we get to the twentieth century, cookery books are starting to become popular due to better eduction, people having more spare time and disposable income. |
