The History of Recipes
Written recipes as an idea can be traced way back into history, in truth as far back into history as ancient Egypt, and quite possibly further than that. Having said that, generally, these ancient records were just simple hieroglyphic instructions for preparing meals.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, are a few ancient tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Later on, in The time of the romans 25BC a roman called Apicius compiled a few documents which described recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals were split into appetizers, main meal and dessert, a style of dining still practiced today. Additionally, he tells us how the Romans were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern cooks for example bay, rue and dill. Over the succeeding few centuries, the rich and powerful families of Europe tried to serve the most exotic meals, and as a result the best chefs and their recipe collections were highly sought after. Nevertheless, it was during the 19th century that haute cuisine and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, trying out, and publishing the recipes of their peers. The TV revolution brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes just like those on our site. |
