The History of Recipes
We are able to trace the history of meal recipes far back into distant history, at least as far into history as the ancient Egyptians, and quite possibly further than that. However, in the main part, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
As we move into Roman times 25BC a man called Apicius created a few documents which described recipes cooked by his fellow Romans. In his scrolls, he tells us how the roman meals were separated into appetizers, main meal and afters, a very modern way of dining. Aspicius also recounts how the cooks of Roman times made use of many different herbs and spices, including a few you will know such as thyme, rue and parsley. During the next few centuries, the rich families of Wesstern Europe tried to offer the most exotic meals, and as a consequence, the best cooks and their collection of recipes increased in prestige. Nevertheless, it was during the 19th century the formal cooking and cookery books rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down popular recipes of the day. By the advent of the 20th century, cooking publications are starting to become popular mostly due to more people being able to read, more leisure time and a general increase in wealth. |
