The History of Recipes
We are able to trace the history of meal recipes back into the far past, at least as far into history as the ancient Egyptians, and potentially, even further back. Interesting though that maybe, these, ancient cookbooks were just very basic hieroglyphic instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to food historians is a series of stone tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. As we move into Roman times 25BC a man called Apicius created a few documents detailing recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were divided into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius informs us how the cooks of Roman times were skilled in the use of a good variety of spices, including a few that are still present in modern kitchens like thyme, fennel and asafoetida. During the next few centuries, the rich families of Wesstern Europe competed to offer the most exotic banquets, and as a consequence, the best chefs and their recipes could command a high salary. Even so, it was during the 19th century that fine cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, testing, and recording recipes to help cooks of their time. The revolution that is television brings us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on this recipe site. |
