The History of Recipes
It is possible to track the history of `recipes` way back into the far past, certainly as far back as pharonic Egypt, and potentially, even further back. Having said that, mostly, these old cook books were just simple pictorial recipes for meal preparation.
Later on, in The time of the romans around 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by wealthy roman citizens. He tells us how the roman meals were divided into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. This early Roman chef recounts how the ancient Romans were skilled in the use of many aromatic flavors, including some familiar names such as bay, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back many foods and herbs from Arab cooking, including spices like rosemary and coriander. The introduction of these new foods and spices caused an eruption in manuscripts on food, many of which are now in private libraries. By the time we get to the 1900s, cooking books are in high demand, mostly as a result of more people being able to read, people having increased spare time and disposable income. |
