The History of Recipes
Transcribed cooking instructions as a concept can be tracked way back into antiquity, at least as far back into history as early Egypt, and quite possibly further than that. Having said that, generally, these early cook books were just very simple hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe found, according to experts are some ancient tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. Later on, in The time of the romans 25BC a roman called Apicius compiled a few scripts describing recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the roman meals were divided into appetizers, main course and afters, something that is very familiar to us today. Aspicius also recounts how the ancient cooks made use of many spices, including a few that will be familiar to modern chefs such as basil, rue and parsley. Over the succeeding few centuries, the rich and powerful families of Wesstern Europe competed with each other to offer the most extravagent meals, and as a result the best chefs and their recipe collections became highly prized. Nevertheless, it was during the nineteenth century the formal cooking and recipe publications became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collating, testing, and publishing popular recipes of the day. When we get to the 20th century, cookery books were in great demand, mostly as a result of increased literacy, people having increased free time and disposable income. |
