The History of Recipes
Historians have traced the existence of recipes back into the distant past, at least as far back as pharonic Egypt, and maybe further still. Having said that, mostly, these old records were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe found, according to experts are some clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Progressing into The time of the romans 25BC a man called Apicius assembled some documents detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into starters, main meal and desserts, a very modern way of dining. This early Roman chef recounts how the early Romans were skilled in the use of a wide range of aromatic flavors, including a few that are still present in modern kitchens such as bay, rue and asafoetida. Over the next few centuries, the powerful families of Europe competed to serve up the most extravagent banquests, and as a result the best cooks and their recipe collections became highly prized. Notwithstanding that, it was during the 19th century that cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and recording popular recipes of the day. By the arrival of the twentieth century, recipe publications were highly popular as a result of increased literacy, more leisure time and disposable income. The introduction of television brought us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to access massive numbers of recipes just like those on sites such as this. |
