The History of Recipes
We are able to follow the history of written recipes way back into ancient history, at least as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. However, in the main part, these ancient cook books were just simple pictorial recipes for preparing meals.
In an interesting twist, the most ancient recipe discovered, according to Professor Solomon Katz, are some tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Later on, in The time of the romans 25BC a roman called Apicius compiled a few documents which described recipes prepared by wealthy roman citizens. He describes how the meals of wealthy Romans were separated into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the ancient Romans used many spices, including a few you will know like basil, rue and asafoetida. Continuing our culinary historical journey, there were two interesting cookery books which appeared in the 1300s : a recipe book titled `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these two books are not about the indian curry that is served today, but rather recipes for the types of food on the tables of the rich and powerful of that time. Later on, in the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, including spices such as basil and rosemary. These new herbs and spices created a torrent in books on cooking, some of which still exist in private libraries. When we get to the 20th century, cookery publications are increasing in popularity mostly as a result of better eduction, leisure time and being a little richer. |
