The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions far back into antiquity, at least as far back into history as early Egypt, and possibly even further than that. Interesting though that is, these, ancient cookbooks were just very simple pictorial recipes for preparing food.
In fact, the most ancient recipe found, according to food historians is a series of stone tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius compiled a collection of scripts which described recipes prepared by his fellow Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the cooks of his times used a good variety of aromatic flavors, including a few that will be familiar to modern chefs such as basil, mint and parsley. For the next few years, the rich and powerful families of Europe tried to serve the most exotic banquets, and as a result cooks and their recipes could command a high salary. Even so, it wasn`t until the 19th century that cookery and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. By the advent of the twentieth century, cookery publications are increasing in popularity mostly due to increased literacy, people having more spare time and having more money to spend. The introduction of the TV brings us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes such as those found on sites such as this. |
