The History of Recipes
Transcribed cooking instructions as an idea can be traced way back into ancient history, at least as far into history as early Egypt, and maybe further still. In practice though, in the main part, these early recipes were just very basic hieroglyphic or cunieform recipes for food preparation.
During the time of the Romans a man called Apicius compiled some scripts detailing recipes cooked by his fellow Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, a style of dining still practiced today. Additionally, he tells us how the cooks of his times made use of a wide range of aromatic flavours, including many that are still in use today like bay, fennel and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many foods and herbs from Arab cooking, including basil and coriander. The introduction of these new tastes prompted an outbreak in manuscripts on cookery, many of which still exist in academic collections. When we get to the 20th century, recipe books were in great demand, mostly as a result of more people being able to read, people having more leisure time and a general increase in wealth. |
