The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into the far past, at least as far into history as the early Egyptians, and quite possibly further than that. Interesting though that is, sadly, these ancient records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to experts in ancient history is a series of clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans around 25BC a man called Apicius created some scripts detailing recipes cooked by the Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. He also tells us how the ancient cooks were skilled in the use of a good variety of herbs, including some familiar names such as thyme, mint and parsley. Moving on, we have two recipe books dating from the fourteenth century ; a book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the indian curry that appears on menues today, but instead descriptions of the types of food on the tables of the rich and powerful of the period. Later, in the 15th century, knights returning from the crusades brought back many foods, spices and herbs from the Middle-East, including spices like rosemary and coriander. These new foods and tastes prompted an outbreak in recipe books, some of which are kept safe in academic collections. Like it or not, the introduction of TV brings us TV cookery programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on this web site. |
