The History of Recipes
It is actually possible to trace the history of written recipes back into distant history, in fact as far into history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, in the main part, these old cook books were just simple hieroglyphic or cunieform instructions for preparing food.
As we move into Roman times 25BC a man called Apicius compiled a number of scripts showing how to cook the recipes cooked by wealthy Romans. In his works, he describes how the meals were separated into hors d`oeuvres, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient chefs made use of many different spices and herbs, including some familiar names such as basil, mint and parsley. During the following few centuries, the wealthy families of Wesstern Europe strove to serve up the most extravagent banquests, and as a consequence, cooks and their recipes were much in demand. However, it wasn`t until the 1800s that cooking and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the advent of the 1900s, recipe publications are greatly in demand as a result of more people being able to read, people having more spare time and having more disposable income. |
