The History of Recipes
It is actually possible to trace the history of written cooking instructions far back into the distant past, at least as far back into history as the Egyptians, and potentially, even further back. However, these, ancient recipes were just simple pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to academics is a collection of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. During the time of the Roman Empire a roman called Apicius created a collection of documents showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into appetizers, entrees and dessert, something that is very familiar to us today. Additionally, he recounts how the chefs of Roman times were skilled in the use of a good variety of herbs, including many that are still in use today like basil, fennel and dill. Over the following few hundred years, the rich and powerful families of the West strove to offer the best banquets, and as a result the best chefs and their recipe collections were much in demand. Even so, it was during the 1800s that fine cookery and recipe publications became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and recording recipes to help cooks of their time. The introduction of television gave us TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everybody to access massive numbers of recipes such as those found on the site you are now reading. |
