The History of Recipes
Transcribed cooking instructions as an idea can be found way back into distant history, certainly as far into history as the ancient Egyptians, and maybe even further. Having said that, sadly, these ancient cook books were just very simple pictorial instructions for preparing food.
Much later, in Roman times a roman called Apicius assembled a number of documents describing recipes cooked by the Romans. In his publication, he recounts how the roman meals were divided into appetizers, entrees and dessert, a style of dining still practiced today. Aspicius informs us how the ancient cooks used a good variety of spices, including a few that are still present in modern kitchens like thyme, mint and dill. Over the succeeding few hundred years, the upper-class families of the West competed with each other to lay on the most exotic banquets, and because of this chefs and their recipe collections were greatly in demand. Even so, it was during the 1800s that fine cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, testing, and recording recipes to allow everyone to enjoy them. When we get to the twentieth century, cookery publications were in high demand, mostly due to higher levels of literacy, leisure time and having more money. |
