Ingredients
6 chocolate wafers, crushed
1 1/2 cup light cream cheese
1 cup sugar
1 cup low fat cottage cheese
2 tbsp chocolate morsels
1/4 cup + 2 t unsweetened cocoa
1/4 cup flour
1/4 cup amaretto
1 tsp vanilla
1/4 tsp salt
1 egg
1 chocolate curls
Directions
Sprinkle chocolate wafers in bottom of a 7 inch springform pan. In a
food processor put cream cheese and the next seven ingredients.
Process until smooth. Add the egg and process just until well
blended. Fold in chocolate morsels. Slowly pour mixture over the
crumbs in the pan. Bake at 300F for 65-75 min. or until cheesecake is
set. Let cool in pan on wire rack. Cover and chill at least 8 hours.
Remove sides of springform pan and transfer to a serving plate and
garnish with chocolate curls.

The History of Recipes
Experts have tracked the existence of recipes way back into antiquity, in fact as far into history as ancient Egypt, and maybe even further. Interesting though that maybe, generally, these ancient cook books were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.
As we move into The time of the roman empire 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes cooked by wealthy Romans. In his publication, he describes how the meals were separated into starters, entrees and afters, a style of dining still practiced today. Additionally, he tells us how the Roman chefs were skilled in the use of a wide range of herbs, including many that are still in use today for example basil, fennel and parsley. Over the next few centuries, the rich and powerful families of Wesstern Europe strove to serve up the most exotic meals, and as a result chefs and their collection of recipes were at a premium. Even so, it was during the 1800s that cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, verifying, and recording recipes of the day. The introduction of television brings us TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on the site you are now reading. |
